Mandarin Bundt Cake

Howdy friends, here’s a simple dessert for spring and summer. The cinnamon and mandarin inside the cake, as well as in the drizzle and on top make this a delicious citrus spice cake!

Cake

1/3 c. butter, softened

1 1/3 c. brown sugar

2 eggs

1/2 c milk

1 3/4 c flour

3 t baking powder

1/2 t. salt

1 t. cinnamon

3 mandarins

Topping

1/2 c. maple syrup (your favorite)

1 egg white

1/2 t. cream of tartar

1/4 t. cinnamon

1 mandarin

• Mix butter and sugar until blended. Add eggs and milk. Add remaining ingredients into mixer until blended.

• Bake 350°F for 40 minutes.

• For the drizzle, add the ingredients to a saucepan over med temperature. Stir constantly until it bubbles for a few minutes. Pour into a mixer and add the mandarin. Once the cake is cool to touch, add the drizzle.

• Top with sugar coated mandarins.
