Howdy friends, this is a vintage family recipe for Lemon Squares!
1 cup of butter, softened
1/2 c plus 1 tablespoon of confectioners sugar.
2 1/3 cups all-purpose flour
1 3/4 cups granulated sugar
1/3 cup lemon juice
1/2 teaspoon double-acting baking powder
Preheat oven to 350°F. In a medium bowl cream butter and 1/2 cup of confectioners’ sugar. Add 2 cups of flour and stir until crumbly. Gently spread evenly into a 9×13 inch dish. Bake for 20 minutes.
Combine eggs, granulated sugar, remaining 1/3 cup flour, lemon juice and baking powder and mix until blendid. Pour over partially baked crust. Bake 25 minutes or until the edges are golden brown. Cool completely on a wire rack. Sprinkle with remaining confectioners’ sugar. Cut into 32 pieces.
